If you haven’t seen this 3 ingredient pumpkin bread on Pinterest, well, you aren’t spending enough time on there.
(see how generous I am with your employer’s time?)
I wanted to do it with Will. He’s sortof obsessed with cooking. like bad. like the Food Network could be our babysitter. And I want to make him a kid’s kitchen (umlikeonyouknowwhere). but a manly one…not a ruffly girl one. one meant for an Iron Chef…not a pansy that wears a polka dot apron 🙂
Since we made this when Jer’s mom was in town I had the chance to actually be in the photos. It was a rarity that you would think I would put on makeup for. and perhaps brush my hair. fat chance.
Basically this bread is just a can of pumpkin…
(some people get weirdly excited about that)
and a very agressive box of spice cake mix.
My little man also added some pumpkin spice….
It’s kinda mandatory to make a mess…and use your ‘trying real hard’ face when mixing…(my sister makes fun of me for pursing my lips like this but she totally does it too but won’t admit it!)
Will totally starting eat the raw stuff…which I was cool with cause there are no raw eggs in this recipe. So this is officially the first time that I’ve let him partake in the time honored tradition of “licking the bowl”…

After we made our mess (next to my gorgeous anniversary roses), we mixed and mixed and mixed.
because to an 18 month old, the mixing is the best part.

It wasn’t out for but a minute till the little man (sans pants) starting picking his bits.
We saw a glaze on Pinterest that you can make from Apple Cider but we just ate it with a bit of butter.
The verdict….
of course, this is the only pumpkin bread he’s ever had…
but he loved it and so did I. I think the key was not overbaking it…because oooh baby, it was like a loaf of pumpkin cake.
Have you guys made anything pumpkin lately? We are planning on carving our ‘kins this weekend so hopefully we’ll have lots of roasted seeds. MMm….I love me some seeds. Hopefully my little Emeril will too 🙂

Hey Katie: We do something similar–15oz can of plain pumpkin mixed well with 1 box of Devils Food cake mix. Sometimes we throw in some chocolate chips. I bake them up in a cupcake tin sprayed with cooking spray so they become grab and go muffins. Yummy out of the oven, and even better the next day.

Awww, I loved this post. Will is the same age as my Jonathan, and 18 months is SOSOSOSOSOSO cute of an age! Year-and-a-halfers are just. too. cute. for. words. (especially with big boy haircuts.) Unfortunately, Jonathan has yet to help me bake because his big sister (4) usually does, and we bake during his nap. Gotta change that.

I love this recipe. I use it all the time! I just made mini muffins out of the same recipe with mini chocolate chips mixed in. You could also drizzle it with cream cheese frosting. Yum! 🙂

If you’re as lucky as I am, the toddler who loves to mix will become the 4-year-old baking his own birthday cake, the 9-year-old who wakes you with the smell of chocolate waffles from a recipe he invented, and the 12-year-old who loves Duff from Ace of Cakes and makes his dad birthday cakes of his favorite board games. (Or video games, in Jeremy’s case!)

I totally tried a similar recipe from pinterest with the pumpkin and box of yellow cake mix. It was yummy but need a little frosting. I tried this one: http://addapinch.com/cooking/2011/09/23/cream-cheese-frosting/
and it was literally to die for. I was almost eating it by the spoonful. Yum! So- if you want to try it again and need something for on top- this is your recipe.

They are AMAZING. And FAR from toddler friendly cooking.
But, the good thing is you can do the beginning after they go to bed, and the end before they wake up (or at least while they play with dad while you can finish them).

I love this on multiple levels! My little guy has an egg allergy, so we struggle to find baked goods he can eat (and actually enjoy- unlike his birthday eggless chocolate cupcakes, which he poked several times but didn’t eat). I also LOVE that quote on your chalkboard in the background! I don’t know if this is what you meant, but I take “You get to do this” as a reminder that tons of women would kill to be a stay at home mom, and even though it is tough, it is a precious gift every day. I need that quote on my wall too! (Sorry if that’s not the meaning of your quote– it could just be God reminding me to be thankful this morning!)

My husband LOVES pumpkin bread, but refuses to try this recipe (he’s a from scratch kinda guy). I did try a from scratch recipe (found via Pinterest but tweaked via me) for pumpkin cupcakes with a homemade cream cheese icing. They were amazingly good!

My son also loved Food Network from a very early age like Will. He was obsessed with all things Rachael Ray for a long long time. By the age of 2 he was pointing things out in the grocery store like ginger, eggplant, cilantro, etc… He’s now 6 years old and making cinnamon french toast for breakfast on his own. 🙂 Loves the show Diners, Drive Ins, and Dives…HAHAHA I absolutely LOVE it…so cute!! I think that I will try this recipe with my 18 mo Eleanor this week. I made Amish bread with her this last week, but it had about 20 ingredients, which got MESSY. (I was letting her stir while I dumped in each ingredient, she got a leetle too excited in the stirrage category, and ended up flinging flour and cinnamon all over the counters and floor!)

I first had this recipes (but in ours the third ingredient is cinnamon chips) 6 years ago at a Christmas party. My neighbor served it as a bundt cake (350 degrees for around 40 min.) with cinnamon ice cream on the side. Yum! I soon modified it, though, and we’ve been enjoying it in mini-muffin form (but who are we fooling? It’s cake!) ever since. I bake them at 350 degrees for 18 minutes and they’re perfect everytime (liners help with clean up). Sometimes I sprinkle raw sugar on top for some sparkle and texture. They freeze well, too, and we love them for breakfast (again, cake!), snacks, and dessert.

TOTALLY saw that recipe on Pinterest (<addicted) and tried it last friday night. It said 2-ingredient, but I agree it's 3 extra spices are a must! I made mini muffins and they were okay, super moist though. Even more spices next time (the recipe i saw called for 1 can-1 box yellow cake mix–shoulda gotten the spice cake like you) You're little guy is adorable and how fun that he likes to help in the kitchen 😀

I have been doing this same thing with my son since he could stand up too. Not only is it fun, but I have found it a great way to get him to eat things he might not normally try. If he helps, he seems to want to eat it. So there’s my friendly, unsolicited advice!
Oh, and here’s some more. I’m on a real know-it-all roll today, aren’t I? My son loves cooking too, but in the let’s make a huge mess and then eat something good way- not the let’s make pink cupcakes with dainty sugared flowers way. He loves it so much that we got him the IKEA kitchen for Christmas last year. Well, grandma did any way. He loves pretending to cook along with us in the kitchen, that is when he’s not begging to stir (or sling, as I like to call it). Check them out!
One last thing- the Food Network has helped me through many a meal prep time. My husband’s family is from south GA and they all have thick accents. When my son was about 6 months old, and shortly after visits from all our southern family, I put on Paula Dean. His little head swung around like grandma had just walked through the door with an armful of toys when he heard her say, “Hey Ya’ll!” He’s been hooked ever since!

You should try this amazing pumpkin muffin recipe I found on allrecipes.com (do you go there? It’s an AMAAAAZING site)… You just need a box of yellow cake mix, a can of pumpkin, some cinnamon and nutmeg. You can add a dash of vanilla if you’re feeling wild. Bake ’em at 350 for like, 20 minutes or something. They are super moist and clearly very easy. I’ll have to try your bread recipe next!

Oh, and here I thought I came up with this idea! I actually was hankering to make cake balls, but autumnal ones. So I bought a carrot cake mix, put in a can of pumpkin in lieu of the water, and added a healthy dash of pumpkin pie spice. I mixed it up with a can of cream cheese frosting and coated them in white chocolate. Mmmm. (If you make it as cake instead of cake pops or balls, I’d suggest adding a maybe a 1/4 cup of sugar).

I just made these in muffin form to take to my office on Halloween. But, I used a spice cake mix rather than white (all that delicious holiday spice flavor already worked in!) and then I added about half a package of mini chocolate chips (semi-sweet)…
So delicious! Except, I forgot to bring them in yesterday (left ’em sitting in the kitchen!) so guess what we’re eating today?!
